Food and beverage are some of the great joys of life when fulfilled with care. Our mission is to make this experience accessible to as many people as possible.
In doing this, we believe it’s important to reach out and show appreciation for the communities we serve. Since 2012, we’ve sponsored countless charitable events by providing catering services free of charge, and we frequently donate meals and funds to organizations like Covenant Health Foundation, Rotary Seniors' Dinner and Lobsterfest, Youth One Black Tie Gala, Lethbridge Hurricanes, Harbour Bouse, Royal LePage Gala, Stars Boots & Roots, Italian Open, and Abbondanza. If our staff wish to make donations from their paycheques, we also match their donation to double the impact.
We minimize environmental impact by using fully compostable containers for all takeout food. And we select local purveyors wherever possible to support our region.

To demonstrate our commitment towards Truth and Reconciliation, we acknowledge that our business is conducted on the traditional territories of the Blackfoot Confederacy who are made up of the Piikani Nation, Kainai Nation, and Siksika Nation and Amskapi Piikani Nation. We acknowledge that the Tsuut'ina Nation, Stoney Nakoda Nation, and Métis First Nation have also come to call these territories home. We acknowledge the people past, present, and future who make their home in these lands, and recognize these things in the spirit of Truth and Reconciliation.

Owner/Operator of Prime Catering and Italian Table
Mike has spent the last 40 years as a chef and restaurateur, honing his craft. As the general contractor for six restaurants and numerous banquet and catering spaces, Mike has honed skills in collaboration, space planning design, and mapping roads to success. With over two decades as a multi-unit Moxies franchisee, a decade in the catering industry, and the development of an original concept restaurant, Italian Table, his experience speaks for itself. Currently, Mike Marcotte leads Prime Catering and Italian Table—he keeps the ship upright, providing management and developmental support for the brand and the entire team. Mike currently has two main focuses in his career, outside of excellence for excellence sake. First, he gives back to the community in as many ways as possible, including spreading awareness and opening conversations around sensitive topics. Additionally, he provides individual mentorship for those who seek it, with the understanding that personal growth requires lots of personal work.
Director of Sales, Corporate & Convention Specialist
With more than 35 years of experience in the hospitality industry, Mary has planned and executed every type of event you can imagine. Beginning at the Front Desk of the Lethbridge Lodge Hotel and Conference Centre (now known as the Sandman Signature Lethbridge Lodge) in 1985, she has held many titles. She currently uses her skills and experience to bring events to life, from planning to conclusion. Mary has sat on many committees and boards throughout the years, including Chinook Country Tourism, Lethbridge Chamber of Commerce, and the Alberta Lodging Association. Mary has always had a passion for working with people, whether it's with new clients or long-standing relationships. She has an in-depth knowledge of the intricacies involved in holding events large and small and with this experience, she carefully guides clients through each step of their events. She holds herself and her team to a high standard of care and attention to detail, and brings expertise and knowledge to all events she plans. A personal note: "I enjoy the sense of community that I feel here in the city by knowing many people that I have worked with throughout my time in the industry."
Director of Sales, Wedding & Event Specialist
Lauren has spent the last decade planning events for the Lethbridge community and beyond. She began working at the Sandman Signature Lethbridge Lodge in 2007 and worked her way up to her current role in sales and event planning that she's held for over a decade. She understands that especially with weddings, she's planning milestone events where the outcome has great relevance in the lives of her guests. As it's one the most important days in the lives of her clients, weddings are her priority. It is in her nature to listen, process information, and provide insight that comes from a different perspective. She excels when collaborating and trusts her team, knowing they all have the same goal—to make clients happy. A personal note: "My favorite food is the kind enjoyed with friends. Whether it’s the family I have or the family I choose, breaking bread is at the heart of building memories."
General Manager & Operating Shareholder
Jean has worked in the restaurant industry for nearly 30 years, beginning his first position in 1996 at Moxies Lethbridge. He moved through the ranks over the years and has been our General Manager at Prime Catering since our inception in 2012. Jean believes that hospitality is an idea that most people in our business over-complicate; we believe hospitality is simple. It's "a genuine desire to make someone’s day better.” Jean's goal is to convey this to our team; we hire for attitude, train for technique. Jean's social nature is perfectly suited to his role. He adapts to the ever-changing needs that present themselves during events and leads the team accordingly. His capacity to thrive in this environment helps him deliver for our team and for our guests. A personal note: "There’s nothing I like more than having a game night with friends and family; playing some games and enjoying some snacks and beverages."
Director of People & Operating Shareholder
Sarah has been working in the food and beverage industry for over 15 years, beginning her career at the Fairmont Chateau Lake Louise. She has since managed one of Vancouver's top dessert restaurants, True Confections, as well as Shark Club before receiving a diploma in business management from Lethbridge College. Sarah eventually rejoined Mike and the team at Prime Catering in a senior management role and worked her way to her current position as Director of People. Sarah is charismatic and outgoing, which is an asset for her role. She's enthusiastic and purposeful in training our staff and leads by example. Her flexibility and quick thinking help her manage the dynamic nature of the job. She's genuine in her connections and creates meaningful and memorable experiences for our staff and our guests. A personal note: " I am passionate about food. Growing up in an Italian family, food was always the thing that brought us together. We spent hours in the kitchen learning to create wonderful dishes to share with family and friends."
Executive Chef & Operating Shareholder
Mathieu started his career at Shark Club Sports Bar & Grill in 2008 while attending Lethbridge College's Culinary Arts Program; he completed his Red Seal in 2011. In 2011 and 2012, Mathieu worked as Senior Sous Chef at Moxies Bar & Grill. In 2012, he was promoted to Chef of Prime Catering, and in 2015 to Executive Chef, the title he has held ever since. In 2018 he was part of the team that created our original concept restaurant, Italian Table. Mathieu has a passion for all things food, inspired by extended travels in Europe, and he brings that passion to life everyday. He also brings leadership into our kitchen and to our culinary team. When it comes to creating consistent, outstanding food, Mathieu is organized and prepared; his quiet and calm demeanor allows him to stay focused and effective in even the most chaotic situations. He prides himself on loyalty and passion, which has allowed him to work within the same company for the last 15 years. His vision is to continue inspiring and developing his culinary team of 30 to pursue their own Red Seal certifications and beyond. A personal note: "I love anything creative and inspiring. If I’m not climbing in the mountains, I’m drawing or playing my guitar.
Senior Sous Chef
In 2012, Sarah began her diploma at Lethbridge College while she worked at Mocha Cabana. She soon completed her third year as an apprentice and gained enough hours to write and complete her Red Seal. Sarah then pursued an Executive Chef position in a care facility for Elders where she managed a staff of 15 and was responsible for the preparation, coordination and service of all meals. This role expanded her understanding of many culinary areas and further proved that food is at the heart of quality of life. Sarah joined our team at Prime Catering in 2022 and we value the experience and skills she brings. Sarah has a tremendous work ethic and an eye for detail. She prides herself on dedication, loyalty, and skill. She always says work should be fun and that the hospitality we show our crew should mirror the high level of hospitality we show our guests. She enjoys sharing her skills with others, which aligns well with our values at Prime Catering. A personal note: "Camping, hiking and being in the outdoors is my meditation; they are the things that fill me up and let me re-energize myself as my career is both physically and mentally demanding."
